Welcome to Rooted, a program dedicated to showcasing Indigenous cuisine at 911吃瓜鈥攂oth through these menu items at 911吃瓜's Dining Commons and a catering menu. In collaboration with Indigenous chef, Steph Baryluk, we've created a collection of fusion dishes inspired by Indigenous flavours and ingredients. Along with each dish, you'll find educational resources and personal notes from Chef Steph about the dishes or ingredients used and their cultural significance. Rooted dishes are featured in the Dining Commons menu rotation, keep an eye out for the Rooted signs when dining. Meet The Chef
Steph Baryluk
Chef Steph Baryluk, a proud Teetl鈥檌t Gwich鈥檌n from Teetl鈥檌t Zheh (Fort McPherson), Treaty 11 Territory, draws deep inspiration from her Arctic upbringing, where hunting, fishing, and land stewardship shaped her connection to food and cultural heritage.
With more than 10 years of experience as a Red Seal Indigenous Chef, Steph is passionate about preserving and sharing Indigenous culinary traditions through education, culinary training, and community engagement.
Named one of Canada's Top 100 Most Powerful Women in 2024 and a recipient of the WXN Food Industry Award, Chef Steph is a leader in advancing Indigenous food systems. From community kitchens to the global stage, she combines her culinary expertise with advocacy to inspire future generations while promoting sustainability and celebrating Indigenous cultural heritage.

Chantelle Trainor-Matties is an artist from British Columbia, Canada with Nisga鈥檃 and M茅tis heritage that specializes in illustration, graphic design, painting as well as mural work. She works for herself and does freelance and contract work for private and commercial clientele through her small business Frettchan Studios. Her work ranges from bold contemporary Northwest coast formline to charming cartoons to painterly realism.
"For this design I wanted to emphasize the contemporary Northwest Coast formline as the foundation, incorporating some key elements such as the ovoid and U-shape, then having the roots draw from this foundation would in turn keep the tree strong, beautiful, and fruitful. To represent the program "Rooted: Bringing Indigenous Flavours to Dining Commons", the design symbolizes going back to your roots." -Chantelle
